תמצית

הפרויקט מציג תיכון של תנור מסוע לאפיית פיתות למקומות קטנים המסוגל לייצר בין 500 ל-600 פיתות לשעה. המוצר פותח בתמיכת חברה פרטית על-מנת לענות לדרישת השוק למוצר איכותי אשר ימוקם במסעדות וסופרמרקטים לייצור תעשייתי קטן וכראווה לשיפור המכירה.
התכנון נעשה על בסיס מחקר ואיסוף נתונים על תהליך אפיית הפיתה על-פי ניסיונה של החברה, ניסיונם של בעלי מאפיות וניסויים ומדידות שנעשו למטרת פרויקט זה. בכך הוגדרו המאפיינים ההנדסיים לקבלת אפיית מוצר איכותי, עמידה לדרישות הלקוח, ובעיות טכנולוגיות שקיימות במוצרים מקבילים.
תכנון התנור מכיל שלושה תתי מכלולים: מערכת המסוע, מערכת החימום והמבנה הכללי של התנור. מהות הפרויקט הייתה לשלב מערכת מסוע הממוקמת בסביבת טמפרטורה גבוהה ועם זאת לא לפגוע בחלקים מסוימים כגון מערכת ההנעה, מיסוב, וחלל המיועד למערכת החשמל.
הפרויקט מציג תרשים כללי של התנור, חישובי כוחות, בחירת רכיבים ואנליזה תרמית שנעשתה בשיטת אלמנטים סופיים.
התוצר הסופי מציג מבנה מתוחכם המתחשב במגוון הרחב של הדרישות כגון התפשטות תרמית, התחשבות בהנדסת אנוש וכד'.
מערכת ההנעה ממוקמת בתחתית התנור וכך לא מגדילה את מימד הרוחב אלא את מימד הגובה ושומרת על יחידת ההנעה. המסבים, התמסורות והחלל למיקום גופי החימום הורחקו מהאזור החם ובנויים כך שיהיה קל לבצע תחזוקה והחלפת חלפים. בראש ובראשונה מבנה התנור מממש את הדרישה לאפיית מוצר איכותי על-פי הדרישות שהוגדרו.

Abstract

The project introduces the design of a conveyor oven for baking pita bread for small places that can produce between 500 and 600 pitas per hour. The product was developed with the support of a private company in order to meet the demands of the market for a quality product that will be put in restaurants and super markets for a small industrial production and to improve sales.
The design was based on research and data gathering of baking processes according to the company's experience, the bakery owner's experience and experiments and measurements that where done for this project. This defined the engineering characteristics in order to obtain a quality baking product, meeting the customer's demands and technological problems that exist in parallel products.
The design of the oven is made of 3 parts, the conveyor system, the heating system and the general structure of the oven. The main point of the project was to combine the conveyor system located in an area of high temperature and not to damage certain parts such as the moving system, the bearing and the space intended for electricity.
The product shows a general diagram of the oven, force calculations, selecting elements and thermal analysis that was done in the finite element method.
The final product displays a sophisticated structure that takes into consideration a variety of requirements such as thermal expansion, human engineering consideration etc.
The moving system is located at the bottom of the oven and so does not enlarge the width but it enlarges the height and maintains the moving unit. The bearings, the transmission and the space for the heating bodies' location were put away from the hot area and are built such that it will be easy to do maintenance work and replacing parts. First and for most the structure of the oven meets the demands of baking a quality product according to the requirements that were defined.
